The Pantry Dish

Making this breakfast dish makes me want to always have Homemade Enchilada Sauce on hand.  Homemade is always best of course, but if you're a fan of this mexican breakfast a canned sauce will also suffice.

Here's what you'll need:

4-6 tbsp vegetable oil

12-14 (sorry about the typo in the picture) corn toritillas cut into 1" pieces

6-8 whole eggs (6 if you are using all the yolk, 8 if you are taking some out)

1/4 tsp cumin

salt & pepper to taste

3/4 cup enchilada sauce

1/2 - 3/4 cup chopped cilantro

Heat the oil in a large nonstick pan on medium high heat.  Lightly toast the tortillas until they start to brown and begin to get crispy (about 10 minutes).  Crispy tortillas are important here because they will end up abosorbing the sauce too fast if they haven't been toasted enough.  Trust me you don't want that to happen.

Okay.  Here's where you want to have everything ready to go because if you take too long adding the next ingredients, everything could turn mushy if you haven't toasted the tortillas enough. 

Gently fold in the enchilada sauce until the tortillas are evenly coated with the sauce.

Add the combined eggs and milk along with the cumin, pepper and salt.  Continue to gently fold the ingredients together until the egg is about halfway done being cooked.

Add the cilantro. Mix it all in gently.

Serve and enjoy. 

Or.

why stop there?!

Top with sour cream (or Crema Fresca which is how I prefer it), crumbled Queso Fresco, and diced avocado.  

Oh yeah.  That's better. Dig in!
