
I was brave this time. Can't believe I actually enjoyed this salsa with the amount of heat it had. When it comes to salsa I always go for flavor before heat. In this case I was being adventurous and tried to meet the two somewhere in the middle. In the end I could have used a little less heat (I know I know, what a disgrace ha?!) At least I am trying to broaden my spicy taste bud experiences right? For this salsa I wouldn't say that I hit a home run because we felt that it needed something to bring down the acidity level (I put a little too much lemon juice I think). Overall there was a good amount of flavor though.

The main ingredients:
Pasilla Chili Pepper
2 Serrano Chili Peppers
1 Yellow Pepper
3 Large Tomatoes
2/3 Red Onion (it was all I had for onion)
4 Medium Tomatillos
1/2 bunch of Cilantro

FYI......put the tomatillos in an oven safe dish because they will get messy.
I have so much cilantro because I got it real cheap so I put some in with the tomatillos while they baked in the oven, but you don't have to.
Cover with foil.

Bake in the oven @ 450 degrees for about 40-45 minutes.

See what I mean. Messy but a yummy treat for salsa so make sure you keep those juices contained.

Bring out your food processor or blender and start blendin' your oven roasted veggies one at a time.
I started with the onion and serranos, set that aside in a large bowl then just continued with whatever I could comfortably fit inside my food processor. After each batch I added it to the large bowl to combine everything.

How I used this 3-pepper roasted salsa you may ask. Well..........
I sauteed garlic in butter then added some shrimp. A few minutes later threw in some salsa, mixed it all together until the salsa was nice and warm and coated all the shrimp. Gave my husband a taste then I ate about 3/4 of the bowl of shrimp.

Definitely coming back for more of this!
My favorite though was using it on tonights dinner: Steak Tacos with freshly boiled pinto beans, shredded monterey jack cheese, chopped lettuce, all on a warm flour tortilla.
