Salzapacho is the name I gave this salsa because it sort of is a hybrid between a Salsa and a Gazpacho.  It's light, refreshing, sweet, and possesses a bit of an earthiness from the roasted sweet peppers.  A traditional gazpacho has similar ingredients with the same summery refreshing taste, but also usually includeds cucumber and bread (which has been lightly soaked in a white wine or olive oil).  This was one of my favorites so far because of its dual purpose of being a salsa and a soup at the same time.  It really is good enough to eat alone!

This simple, light, one pot wonder had me going back for seconds.  It's like a comfort food with very little guilt.  Well, for me there was no guilt :)

Albondigas! The Mexican Meatball Soup that I have loved from the day that I was introduced to it (by my mother of course).  Hands Down my all-time favorite.  As you may know I LOVE SOUP!  This one in particular has always been a hit whenever I serve it to our guests.  Just looking at this picture makes me want to go into the kitchen and whip up a fresh hot batch of this soup.  If you had to choose one recipe to recreate from this website as of this post, this would be it.  You won't regret it.  My poor excuse for presentation and photography don't do it any justice.

This is hardly the kind of Tortilla soup that you might find at any restaurant.  It's a filling, flavorful, comfort food dish that has me wanting more everytime I see it and remember how good it was.  Usually when i order this at a restaurant I'm left wanting more of the filling ingredients, so when I make it at home I make sure that mine is gonna fill me up the first time.  The only time I make this is when we have the rotisserie chicken from costco the night before because we never finish it.  So if you're only cooking for two or three people, you can make two dinners out of this $5 pre-cooked chicken (or just buy a small boneless package at the grocery store and cook it yourself either by boiling it or braising it).  One of the other dishes that I make out of leftover chicken is enchiladas.

If I coud have it my way, we would be having soup for dinner AT LEAST three nights out of the week.  Seeing how life can't always be about me (darn) I will settle for one night with plenty of leftovers to keep me full the following day.  Last night I made a big pot of chicken soup but had to change a few things because I was lacking a few of my usuall ingredients, which is fine considering I love a challenge when it comes to cooking.  It really didn't matter anyway because one way or another I was getting my chicken soup this week!  I have a cold and it has been raining over a week now, so i'd have to say this is the perfect time for soup.  The usual ingredients I like to use (that are missing here) are zucchini and potatoes (instead of green beans and pasta).  This time I had to improvise.  Hope you enjoy!
