We took Easter Egg dying to a whole different level this year. Not the healthiest approach, but these Eggs make a nice basket "stuffer". I plan on giving one to each of the older kids in our family, specifically the ones who don't get Easter Baskets anymore. After all the work that we put into them though I may have a hard time doing that.
I called up my cousin Amanda who is considered the baker in our family and asked her if she could help me with this baking project. She is pretty talented, but I won't tell her that because i'm affraid her head will get bigger than it already is....oops forgot she's probably reading this....hehe....just kidding cousin......or am I? Anyway, thankfully she was ready and willing. God Bless her soul. It was a long process! I wouldn't have been able to finish if she wasn't there to help me.

I had been wanting to make Macaroons for a long time now, so finally I did. While at the grocery store one day I passed by the baking aisle and saw the bags of coconut flakes, and wondered if there was a recipe on the back of those bags to make Macaroons. Sure enough there was! I bought it, put it aside and finally got around to making them. The only thing I changed from the recipe on the bag was the use of Almond Extract. The smell of it makes me gag, so I used Vanilla instead. Turns out, they're pretty easy.

In case you don't know me I sould probably tell you that I am not a baker. Measuring, sifting, blending, kneading, and everything else that goes with baking is not something that I take as serious as I probably should. To be honest I just don't have the patience for baking. That's why I love this recipe. Thank you Tia Sandra for sharing this recipe with me!! I love it! It's easy enough for people like me who don't have the patience for long ingredient list recipes.
