This is hardly the kind of Tortilla soup that you might find at any restaurant.  It's a filling, flavorful, comfort food dish that has me wanting more everytime I see it and remember how good it was.  Usually when i order this at a restaurant I'm left wanting more of the filling ingredients, so when I make it at home I make sure that mine is gonna fill me up the first time.  The only time I make this is when we have the rotisserie chicken from costco the night before because we never finish it.  So if you're only cooking for two or three people, you can make two dinners out of this $5 pre-cooked chicken (or just buy a small boneless package at the grocery store and cook it yourself either by boiling it or braising it).  One of the other dishes that I make out of leftover chicken is enchiladas.

If I coud have it my way, we would be having soup for dinner AT LEAST three nights out of the week.  Seeing how life can't always be about me (darn) I will settle for one night with plenty of leftovers to keep me full the following day.  Last night I made a big pot of chicken soup but had to change a few things because I was lacking a few of my usuall ingredients, which is fine considering I love a challenge when it comes to cooking.  It really didn't matter anyway because one way or another I was getting my chicken soup this week!  I have a cold and it has been raining over a week now, so i'd have to say this is the perfect time for soup.  The usual ingredients I like to use (that are missing here) are zucchini and potatoes (instead of green beans and pasta).  This time I had to improvise.  Hope you enjoy!
